Oatmeal Raisin Flaxseed Muffins

Ingredients
1 cup whole wheat flour1/4 cup all purpose flour1/4 cup flaxseed meal1 cup raisins unpacked1 cup oats1/3 cup sugar2/3 cup splenda2 Tbsp molasses1/2 Tbsp canola oil1 large egg1/2 cup plain low-fat yogurt1 tsp vanilla extract1 1/2 tsp ground cinnamon1/4 tsp ground nutmeg1 tsp baking powder1/2 tsp baking soda1/2 tsp salt
Directions
Makes 12 regular size muffins.

Simmer raisins in 1 1/4 cups of water for 10 minutes. Remove from heat and allow to cool. Do not drain the water.
Prepare 12 regular muffin tins with baking papers or cooking spray.
Preheat oven to 350 degrees.
In large bowl, mix the flour, flaxseed meal, baking powder, baking soda, cinnamon, nutmeg and salt.
In small bowl, mix the egg and oil. Add the sugar, splenda, molasses, vanilla, cooled raisins and water, and yogurt. Mix until smooth.
Add the wet ingredients to the large bowl and mix until combined. Should be thick but fluid. Add water if needed.
Fold in oats to batter until combined.
Spoon batter into muffin tins.
Bake for 20 minutes or until toothpick inserted into center comes out dry.

    Fabulous! I used vanilla low fat yogurt and only 1 tsp of cinnamon. The molasses makes them very sweet. My man says they are wonderful and chocked full of good stuff, wheat flour, flaxseeds and hardly any fat! - 7/2/08
