1lb skinless chicken breast2 large carrots, peeled and chopped1 large onion, peeled and chopped1 cup of frozen, chopped collards (or fresh, of course)5 cups water5 tsp Better Than Boullion broth base2 cups egg noodles2 tsp Herbs de Provence (or a combo of marjoram, thyme and basil)
Put whole chicken breasts and all other ingredients except noodles into a crock pot set on high heat. After cooking for 3 hours, remove chicken and shred with a knife and fork. Add back to crock pot and cook for 30 minutes more. Add egg noodles about 15 minutes before serving.
