Mashed Potato, Instant prepared and cold, 2.0 cup (remove)Flour, white, .25 cup (remove)Salt, 1/2 tsp (remove)Pepper, black, 1/2 tsp (remove)Garlic powder, 1/2 tsp (remove)Egg, fresh, whole, raw, 1 large (remove)Fresh Chives, 1 tbsp chopped (remove)--------------Olive Oil, 2 tbsp (remove)
Mix 1st 7 ingredients well. Helps if potatoes are leftovers and already cold from the refrigerator.
Heat olive oil in med-hot pan.
Spray ice cream scoop (=1/4 cup) with Pam or cooking spray.
Dip by ice cream scoop (or 1/4 cup) into frying pan.
Take fork and press down lightly.
Fry 3-4 minutes on each side until golden brown.
Serving Size: 8 - 2" (1/4 cup mixture) pancakes
