Amazing Veggie Burgers!

1 sweet yellow onion, finely chopped1 Zucchini, grated1.5 C button mushrooms, chopped1 T Italian Seasoning1 package Gimme Lean "Beef" .5 C chopped Walnuts1 T chopped fresh Parsley2 T Tahini1 T Low Sodium Soy Sauce.5 C rolled oatsSalt and Pepper to tasteRed pepper flakes to taste (optional)
Using cooking spray as needed, saute onion, zucchini and mushrooms about 5 minutes, until softened, adding the Italian seasoning and red pepper flakes as you cook. Set aside to cool somewhat.
While the veggies cool, grind oats in food processor until finely ground and add tahini and soy sauce, pulse to combine.
Transfer oats mixture into a large mixing bowl. Using the same food processor, grind the walnuts to a powder. Add the parsley and pulse to combine. Add walnuts mixture to mixing bowl with oats mixture.
Add salt and pepper, Gimme Lean and cooled veggie mixture to mixing bowl, combine with your hands until well incorporated. Form into 6 patties and refrigerate for 30 minutes.
In a 350F oven, place the patties on a baking sheet covered in foil with cooking spray. Spray the tops with cooking spray and cook 30 min, flipping halfway through.
Serving Size: 6 medium burger patties or 4 huge ones
