Sugar Free Lemon Chia Seed Mini Muffins

1/4 cup coconut flour1/4 tsp salt1/4 tsp baking soda1/4 cup grapeseed oil3 eggslemon rind from 1 lemon1 tbsp chia seed2 tbsp xylitolabout 1/4 cup water
In a bowl combine coconut flour, salt and baking powder, grapeseed oil, eggs & lemon rind.
Take two tbsp of xylitol and put it in 1/4 measuring cup and fill with water and stir.
Add the xylitol/water mixture to the rest of the ingredients and mix with a whisk until blended.
Stir in chia seed.
Pour about 1 tbsp into greased mini muffin pan
Bake at 350 for about 10 minutes
