Baked Pork Chops with Cream of Mushroom Soup and Rice

4 3-oz pork chops, trimmed of fat1 c rice, uncooked1 medium yellow onion, chopped2 c boiling water1 can cream of mushroom soup, undiluted
Preheat oven to 350 degrees.
Spray large skillet with cooking spray. Brown chops over medium heat. Set aside. Spray 9x13 baking dish with cooking spray. Add uncooked rice and onions. Pour boiling water over rice mix. Stir to combine. Lay browned chops over rice. Pour undiluted cream of mushroom soup over the rice. Do not mix. Cover and bake for 1 hour, or until rice is tender.
