Pineapple Salsa Chicken and Brown Rice

1 lb boneless, skinless chicken breast strips cut into chunks1 bottle Chi-Chi's Mild Pineapple Salsa1 bag boil-in bag brown rice2 tbsp olive oil
Cook rice according to package directions.
While rice is cooking, heat olive oil in a large skillet over medium heat. Cook chicken until no longer pink and slightly golden brown. Pour salsa over chicken. Reduce heat and simmer until rice is done.
Drain rice and add to chicken. Stir and serve.
Serving Size: Makes four 1 cup serves
