Mashed potatoes - 4 cupsRed Quinoa - 3 cupsMixed Vegetables (frozen) - about 8 - 10 ozBrown Gravy Mix - 1 packet preparedNutritional yeast - 2 tbsp.Almond Milk - 4 oz
Prepare mashed potatoes. Boil potatoes, rinse then add Almond milk, nutritional yeast and other seasonings and blend until creamy.
Cook Quinoa, add to large bowl with mixed vegetables and prepared brown gravy. Mix well.
Place Quinoa mixture in casserole dish, then spread potatoes over the mixture.
Place in Oven on 350 for approx. 30 minutes or until potatoes begin to brown.
Serving Size: Makes approx. 8 - 1 cup servings
