Blueberry Buttermilk Oatmeal Muffins

Ingredients
2 cups oatmeal2 cups buttermilk1 cup spelt1 cup protein powder2 tsp baking powder3/4 cup brown sugar1 tsp baking soda2 tsp cinnamon1 tsp nutmeg1 1/2 cups walnuts1/2 cup pumpkin seeds1/3 cup sunflower seeds2 cups blueberries1 cup unsweetened apple sauce4 eggs2 tsp vanilla extract
Directions
Soak oatmeal in buttermilk for 30 minutes. Mix dry ingredients in a large bowl. Mix wet ingredients with soaked oatmeal. Fold wet ingredients and blueberries into dry ingredients. Scoop into paper lined muffin tins. Bake at 400 for 16 - 18 minutes.
