Quninoa & Broccoli Cups

Ingredients

2 cups cooked quinoa4 cups cooked chopped broccoli1 cup cheddar cheese1 onion diced4 eggs1 tsp minced garlicsalt and pepper
Preheat oven to 350 degrees
Spray muffin pan liberally with non stick spray
Mix all ingredients. Using an ice cream scoop place one scoop of mix in each cup. Press down lightly with the back of a spoon. Bake for 20 minutes
