Thai Style Ground Turkey with Rice

Ingredients
Cooking spray1 cup thinly sliced green onion1 teaspoon bottled minced garlic1 pound lean ground turkey1 teaspoon red curry paste (such as Thai Kitchen)1 cup tomato sauce, no salt1/2 cup coconut milk1 tablespoon brown sugar1/4 teaspoon grated lime rind1 1/2 tablespoons fresh lime juice2 teaspoons Asian fish sauce2 tablespoons Maggi's Sweet Chili Sauce2 cups hot cooked long-grain riceIceberg lettuce wedges (optional)Chopped cilantro
Directions
Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add green onion; sauté 5 minutes. Add garlic; sauté 1 minute. Add turkey; cook 7 minutes or until lightly browned, stirring to crumble. Stir in curry paste and tomato sauce; cook until half of liquid evaporates (about 2 minutes). Add milk and next 5 ingredients (through chili sauce); cook 2 minutes or until slightly thickened. Serve with the rice and lettuce wedges, if desired. Garnish with cilantro and green onions, if desired.

Serves 4; 1/2 cup ground turkey mixture and 1/2 cup rice each

    Delicious! Didn't use fish sauce and used 2tbs. Extra coconut milk. Steamed some spinach and served on top of rice and under sauce... Thai restaurant quality! - 8/8/11
