Red Velvet Meringue Cookies ( Italian ver.)

Ingredients
Egg white : 80 gr ( 3 large eggs)Sugar : 160 grWater : 60 ml ( 1/4 cup)Cream of Tartar : 1/4 tspRed velvet color : 2 drops
Directions
+ Place the water, sugar and cream of tartar in a saucepan and bring to boil gently ( soft ball stage or 125°C on the sugar thermometer ). Continuous stirring to avoid the sugar from becoming caramel.
+ Start whisking the egg whites, once they begin to become white and frothy start to pour the sugar syrup in to the egg whites while continuing to whisk.
+ Once stiff, pipe or spoon on to the baking trays and pop in the oven at 150°C for about 80 minutes.
