Simple Hawaiian Chicken

Ingredients
2.5 lbs boneless, skinless chicken breast, cut into chunks, 1/2 in .5 cup gluten free, low sodium soy sauce.25 cup olive oil1 tsp salt1 tsp black pepper2tsp chinese five spice2 inches ginger root, matchstick1 Tbsp rice wine vinegarI large can pineapple chunks in juice4 large bell peppers, mix colors', rough chop, 1/2 in chunk1 10 oz bag raw carrots, matchstick 2 medium yellow onions, rough chop, 1/2 in chunks.
Directions
Prep chicken, bell peppers, onions, all into same size chunks 1/2 inch pieces, Mix ingredients, soy sauce thru vinegar, whisking together, Pour marinade over chicken chunks only, put in large ziploc bag, store in refridgerator for 2-4 hours. In large bowl, combine marinated chicken including any marinade, bell peppers, onions, carrots, pineapple with juice. Mix until all vegetables are coated and evenly mixed. Pour all together into a large baking dish or dutch oven. ?Bake for 45 minutes at 375 degrees. Make certain all chicken is done through.
