Zucchini Fritters

WET:1 medium zucchini, shredded (about 2 1/2 cups)3 Tbsp Tahini2/3 cup corn kernels1 Tbsp soy sauce (low sodium)DRY:3/4 cup cooked quinoa (1/4 cup dry- prepared)2 tsp garlic powder2 tsp onion powder1 tsp smoked paprikaa few dashes salt and pepper
1. Preheat oven to 400
2. Combine the wet ingredients in a large mixing bowl
3. Combine dry ingredients in small bowl
4. Add dry to wet and mix well.
5. Form into 4 "patties" and put on parchment-lined cookie sheet.
6. Bake at 400 for 20 minutes, then carefully flip and bake for another 15 minutes.
7. Serve with sauce/toppings of your choice. I used my Black Bean Sriracha Sauce (you can find on my recipe page) and served with quinoa, scallions and sesame seeds.
Note: nutritional info is for 1 fritter without the sauce/toppings.
