Egg Muffin with Turkey Sausage

Ingredients
5 EggsEgg whites equivalent to 3 eggs per package4 Turkey Sausage Patties, Butterball3 Baby Bella Mushrooms1/3 Sweet Onion1/3 Skinless, Seedless TomatoSince there were 12 muffins I added different cheeses to each "muffin" including: fat free cream cheese, fat free cheddar cheese, The Laughing Cow Garlic and Herb 3/4 of a wedge, and part skim RicottaSalt and Pepper
Directions
Place turkey sausage, mushrooms, onions, tomato, and cheese in the bottom of a muffin (or cupcake) tin (I used the regular size that makes 12 in a batch.) Mix eggs and egg whites and S&P and pour over ingredients. Bake at 350 15-20 minutes until spongy and golden on top (or to your preference.)

Serving Size: Makes 12 "muffins" about 1/4 cup each
