Dairy-Free Mashed Potatoes

10 medium baking potatoes, peeled4 cloves garlic1 bay leaf1 stalk celery1/2 tsp salt.3 Tbsp. olive oil1 cup unsweetened, original flavor almond milkchivespepper
Boil potatoes with garlic, celery, bay leaves, and garlic until potatoes are soft.
Drain. Remove bay leaf and celery. Can leave or remove garlic.
Using a mixer, blend potatoes, hot milk, chives, salt, pepper, and olive oil until smooth and creamy.
Serving Size: Makes 16 1/2-cup servings (or 8 1-cup servings)
