Reduced Fat Coconut Cream Pie

Ingredients
1 small package (4-serving size) Jello Coconut Cream Instant Pudding Mix1 1/4 C. nonfat milk1 regular size tub lite Cool Whip, divided1 Keebler reduced-fat Graham Cracker Crust1 1/4 C. shredded, sweetened coconut, divided
Directions
Mix instant pudding with nonfat milk with electric mixer; add 1 C. coconut and half tub of Cool Whip. Pour partially set pudding, coconut, and Cool Whip into graham cracker crust. Toast 1/4 C. coconut in oven set at 350 F. Watch carefully; it burns easily (4 minutes at most)! Top pie with remaining Cool Whip and sprinkle toasted coconut on top. Chill at least 1 hour before serving.
