Light Lentil Salad

Ingredients
Lentils Any color or type Cucumber About 1 American or 1/2 British cucumberFeta Cheese Shallots About 2 largeParsley Around 1 cup but more or less to preferenceCilantro Coriander Around 1 cup but more or less to preferenceLemon Juice Lemon zestSalt and pepper to taste
Directions
Cook lentils or used pre-cooked.
Dice cucumber.
Mince shallots and herbs.
Crumble feta.
Zest your lemon before you juice it and add to the salad.
Mix everything together and add lemon juice before serving

Serving Size: Makes 8 side servings of around 1 cup or 100 grams
