Low Carb Vegetable Lasagna

5 summer squashes, sliced lengthwise1/2 onion, chopped3 oz ground turkey2 T Mediterranean Spices3/4 C small curd cottage cheese2 oz Mozarella, grated1 jar of Trader Joe's Basil Marinara Sauce
Steam summer squash 6 minutes, while sauteing the ground turkey, onion, and 1 T of the spices.
Spray an 8 x 8 baking pan, pour 1 cup of marinara sauce in the bottom of the pan. Layer 1/3 of squash on the sauce. Layer the turkey mixture on top of that, then another 1/3 of the squash. Pour on another cup of sauce. Layer on the cottage cheese, followed by the rest of the squash. Then the rest of the sauce. Sprinkle the top with Mozarella. Bake in the oven at 350 for 40 minutes.
