Ingredients
4 c. old fashioned oatmeal1 c. wheat germ1 c. cold milled flax3/4 c. shredded coconut2/3 c. pine nuts (toasted)1 t. nutmeg1/2 t. cinnamon1/3 c. oil3/4 c. honey2 t. vanilla1/2 c. dried cherries
Directions
Mix all dry ingredients together in a bowl except the cherries. Add the oil, honey and vanilla and stir until coated. It won't be wet but be sure to continue stirring long enough to coat all the dry ingredients. Turn out onto a greased baking sheet (silicone pads work great here). Bake at 350 for 30 minutes, stirring once two twice during cooking period - a large spatula works well for this. Remove from oven and add the cherries. Stir to combine. Let cool then break up any large chunks and store in an airtight container up to a week.

Makes ~21 1/2 cup servings. It's great by itself as a snack or served under yogurt for breakfast.

I made this, with only one substitution. I used sunflower seeds instead of the pine nuts. It tastes SO good, as good as my favorite expensive store brand. I take one serving size in a small baggie for an after workout snack. LOVE it!! - 5/14/08

Since I don't buy the store bought stuff because of the HFCS and other additives, I have needed a good granola bar recipe ~ thanks for sharing. Can't wait to try this :) - 5/28/08

I made this but without the coconut--yummy! I also substituted crushed pecans for the pine nuts. I will make it again! - 4/10/08
