Beef and Barley Soup

Ingredients
1 Tbs olive oil8 cups beef broth1 large can diced tomatos1 cup carrots, chopped1 cup onion, chopped1 cup celery, chopped1/4 cup parsley, finely chopped2/3 cup pot barleySalt and pepper to taste
Directions
1. In a large saucepan, heat oil over medium heat. Add onion and celery and sauté until fragrant. Add remaining ingredients. Bring to a boil. Cover and simmer 1 to 1 1/2 hours, until barley and vegetables are tender.
