Susie's Caulifower Potato Salad

5 Cups Cooked/Steamed, Cauliflower 2- 1 lb. bags steamed 6 Hard Boiled Large Eggs1 Cup Onions Chopped Red or Sweet Salt and Pepper to Taste Paprika for looks LOL Sauce 1/2 Cup Miracle Whip Light1/2 Cup Hellmann's Light Mayonnaise2 tbsp. Yellow Mustard or for as yellow as you like it3 tbsp. Sweet Pickle Relish
Steam Cauliflower, boil eggs, chop 1 large onion. Once cooled mix together add Salt and Pepper to taste. Sprinkle with Paprika. Put in Refrigerator over night so the flavors will meld.(?)
In the morning mix the wet ingredients to create the sauce. I suggest starting out with 1/4 Cup of the Miracle Whip and the Mayo and 1 tbsp of the Mustard add 2 tbsp of the pickle relish. You can always add more. Taste the sauce to see if it pleases you then if you want add more.
Serving Size: Makes 8 1 Cup servings
