Low Carb / High Fat Crab Cakes

1 lb Fresh lump crab1 Can skinless / boneless pink salmon3 Tbspn Avocado Mayo4 ounces ground pork rind crumbs1 Tbspn lemon juice3 Organic eggs1 Tbspn relish1 Tsp Pink Salt1 Tbspn Garlic Powder 1 Tbspn Old Bay seasoningBacon grease (for frying)
Combine all ingredients except the Bacon Fat in a large bowl.
Press into 8 patties.
Heat bacon fat in a frying pan just below medium heat.
Place 2 Crab Cakes in the pan at a time to not over crowd or bring temperature down in pan. Cook each side approximately 6 minutes or until golden brown.
Each crab cake is 1.4 net carbs.
Serving Size: Makes 8 crab cakes
