Taboulleh with barley

Ingredients
3 cups quick barley, prepared2 cups or more fresh parsley, chopped1/4 cup fresh chives, chopped1-2 sprigs mint, chopped1 large tomato, diced fine1 large cucumber, diced fine2 tbsp red wine vinegar2 1/2 tbsp Extra Virgin Olive Oil1 tsp kosher salt
Directions
Prepare barley without salt and drain if necessary. Chop herbs and dice vegetables. Combine all ingredients in a large bowl, toss well, and serve cold.
