Paella style Couscous

Ingredients
1 tsp olive oil1 med shallot diced1 tsp saffron1 T dried parsley24 cooked shrimp1 cup dried couscous1 1/2 c water + 1/4 c water1 c cherry tomatoes quartered3/4 c frozen peas 2 cloves garlic1 T. tomatoe pastepepper
Directions
Put saffron and parsley in 1 1/2 c hot water and set aside saute shallots in olive oil, add garlic and tomatoes, stir in 1/4 c water and tomatoe paste. Simmer until paste-like. Add saffron water, bring to a boil. Add peas, simmer for 1 minute. Add couscous, simmer for 1 minute. lay shrimp on top, turn off heat and allow to sit for 5-7 minutes.
