Grilled Chicken w/Pineapple Marinade

Ingredients
1 Can sliced pineapple (no sugar added)1/4 cup soy sauce2 Tbsp honey2 Tbsp cider vinegar2 cloves garlic, minced1 teaspoon ginger powder1/4 teaspoon cayenne pepper4 - 6 oz boneless skinless chicken breastssalt and pepper to taste
Directions
combine juice from pineapple, vinegar, soy sauce honey and spices in large bowl or ziploc bag
add chicken and 4 pineapple slices
marinate 30 mins (or longer)
Remove chicken and pineapple and grill 20 mins or til done
Grill pineapple on top of chicken or on grill until hot thru

serve as is or in sandwich form (add calores for sandwich fixings)

    the flavor was good but was the chicken supposed to get mushy after being grilled. I have never had this happen before. It's almost as if the vinegar broke down the chicken. - 6/23/12

    I doubled the marinade recipe, cut up 6 large chicken breasts and marinated them pieces for about 6 hours. Then I made Kabobs and grilled them. Delicious!! It was a huge hit with my family and a definite repeat. - 6/9/11

    I really liked this. I used my kitchen shears to cut the chicken into 3-pieces so I could put it on skewers and then grilled it. I took the remaining marinade and boiled it to reduce it and used it as a dipping sauce. Also subbed wheat-free soy sauce since my husband is a celiac. - 8/16/10

    I'd love to try this recipe however, I was wondering why one would calculate all the marinade calories as consumable calories when you don't actually "eat" the marinade. - 9/11/09

    This is really tasty! Thanks for sharing. I used Agave syrup instead of honey. I used fresh pineapple, so I had to crush up some pinepple to make the juice. Instead of soy sauce, I used Organic Tamari (wheat free soy sauce). And I left out the ginger powder, because I didn't have any. - 9/9/09

    I have a teriyaki recipe simalar to this. I didn't have any cider vinegar, however, so I used cream sherry instead. Very Good!! I did marinate for 24 hours in a zip lock bag in the fridge. - 7/20/08
