Black Bean and Corn Flautas

Ingredients
2 tsp olive oil1 medium onion, chopped (1 cup)2 cloves garlic, minced (2 tsp)2 15 oz cans black beans, rinsed and drained2 tsp chili powder1 16 oz tub of fresh salsa, divided1 cup frozen corn kernels1/3 cup shredded cheddar, divided12 6 inch corn tortillas
Directions
Serves 6 - 2 flautas per serving

1) heat oil in skillet over medium heat. Cook onions 3 to 5 minutes, or until soft. Add garlic, cook 1 minute, or until translucent and fragrant.

2) Stir in beans, chili powder, and 1 cup water. Reduce heat and simmer 10 minutes, or until most liquid has evaporated. Remove from heat. Mash beans, leaving a few beans whole. Stir in 1 cup salsa, corn and 1/4 cup of the cheese. Cool mixture.

3) Preheat oven to 425. Coat a baking sheet with cooking spray. Lay out tortillas. Spoon 1/4 cup bean mixture down the center of each tortilla. Roll tortillas around mixture and secure with a toothpick. Set flauta onto prepared baking sheet. Sprinkle with remaining cheese. Bake 6 -10 minutes.

4) Serve with remaining salsa.

    Try adding some Trader Joe's vegan chorizo to the mix. It will solve any flavor deficiencies the current recipe may have. The corn tortillas are an issue though. Try wetting them or using flour.

    If you microwave the corn tortillas a tad before attempting to fill, they will break much less often (or perhaps try steaming them?) - 2/8/09

    I haven't made this yet, but my suggestion to those who have troubles with the con tortillas: To make them easier to work with -- wrap in aluminum foil and warm in the oven or on the stove for a few minutes. - 1/27/09

    Corn tortillas kept breaking when I tried to role them. Over all the recipe was ok. Not a ton of flavor which I was suprised about since it sounded like it would be great. I think i will try it again but with flour tortillas next time. - 11/26/08

    Husband had an issue w/ the corn tortillas as he was making it. Not sure what to do so they don't crack & disintegrate as he's making them. Also, he made more roll ups than the recipe called for because when he put 1/4 cup of the bean mixture into the tortillas he wound up with remaining mixture. - 10/11/08
