Vela Sauce Ingredients15 oz Can Black Bean1/2 Red Bell Pepper 1/2 Red Onion 3 tsp Garlic 1 tsp Bay leavesSalsa Fresco Ingredients14.5 oz Can Diced Tomatoes1/2 Jalapeno Pepper1/4 Red Onion Raw 3 Tbsp Cilantro, raw1 tsp Garlic powder1 tsp Paprika1/2 Lime JuicedDash Salt1 Pkg Grits, Quick Grits Prepared 1/4 cup Egg Beaters1/4 cup FlourPam Cooking Spray4 Fresh EggsGarnish Ingredients2 oz Feta Cheese1/4 Avocado Fresh Sliced Thin
Directions
Combine all ingredients of Vela Sauce in a food processor and puree. Cook the sauce down until it thickens about 10 minutes on medium heat. Combine all ingredients of Salsa Fresco in Food Processor and Sit Aside. Pre-Prepare Grits and Roll in Log and Refrigerator. Slice into 4 equal slices and bread with egg and flour and cook in a skillet on both sides until brown. Cook 4 Eggs Over Easy. Plate Vela Sauce, Top with Egg, 1 Grit Cake, Salsa Fresco, Sprinkle of Feta, and Thin Slice of Avocado.
