Kale, Quinoa, Black bean Salad

2 cups cooked Quinoa1 large lemon, zested and juiced1 tsp coriander1 tsp cumin1 tsp chili paste (or 1 tsp chili flakes)1 tsp chili oil1/4 C cilantro chopped1/4 C extra virgin olive oil2 TBL honey6 C kale leaves chopped and blanched1 C black beans1 large carrot shredded1/2 red pepper1/2 yellow or orange pepper3 green onions chopped1 avocado
1. Cook quinoa to packed instructions.
2. Zest and juice lemon
3. Add lemon juice and zest to a bowl with coriander, cumin, chili paste, and cilantro. Whisk. Drizzle olive oil and honey, whisk briskly.
4. Chop kale and add to blow along with remaining ingredients.
5. Toss dressing and ingredients well.
