5.5 oz asparagus, trimmed4tbs balsamic vinegar3tbs extra virgin olive oil1tbs minced garlic6 oz (1med.)zucchini cut into strips1jar roasted red sweet peppers (drained)Fresh baby spinach leaves5 Low crab, high fiber tortilla's 5 oz Semi soft goat cheese
Trim asparagus stalks. Slice zucchini into thin strip slice sweet peppers into drips if necessary. Mix oil, vinegar, minced garlic and vegetables in large Ziploc bag and let sit for minimum of 30 minutes. Spread 1oz goat cheese on each tortilla. Place approx. 1/2 cup spinach leaves on tortilla then 1/5 of vegetable mix on tortilla, roll and enjoy.
