Banana Nut Oatmeal Protein Muffins

Dry ingredients:1 cup of oatmeal flour (you can grind yourself at home in food processor)1/2 cup old fashioned rolled oat oatmeal2 scoops (2 servings as per package) protein powder, vanilla flavor1/2 teaspoon baking powder1/8 teaspoon salt1/4 cup of crushed and shelled walnutsWet ingredients:3 ripe bananas, mashed2 whole eggs1 tablespoon oil1/4 cup of 100% apple juice
Preheat oven to 400 degrees. Mash the ripe bananas and set aside. Mix the two eggs with the bananas. Mix all dry ingredients and fold them into the wet bananas/egg mixture. Add the remaining wet ingredients, the oil and apple juice. Pour as evenly as possible into 10 tin foil muffing cups or a muffin pan, if you have one for ten muffins. Bake for approximately 40 minutes, or until done (you may test by inserting a toothpick in the middle of a muffin. Let them cool for about 10-15 minutes. Enjoy!
