3/4 Cup Dry Red Quinoa 3 Oz. Baby Carrots Diced 1/2 Cup Diced Onions 1/2 Cup Celery Diced 1/2 of a Jalapeno Pepper Diced 1 Tbsp. Garlic Butter (or make your own) 1/2 Cup Red Bell Pepper Peppers Diced 1 1/2 Cup Chicken Broth (Fat Free)
Heat the butter at medium heat until melted, but does not turn brown. Saute all the veggies until the onions are translucent.
Add the Quinoa, and saute all the ingredients, ensuring the quinoa does not scorch.
Add the broth slowly, increase the heat, bring the liquid to a boil. Cover, lower the heat to low and simmer for 20 to 25 minutes, or until the liquid is absorbed. Fluff with a fork, and serve.
Serving Size: Makes 6-1/2 cup servings
