Paleo Pumpkin Pancakes

Ingredients
4 large eggs1/2 cup canned pumpkin1 teaspoon pure vanilla 1 teaspoon pumpkin pie spice1 teaspoon cinnamon1/4 teaspoon baking soda2 tablespoons melted butter
Directions
Whisk all ingredient together. Heat a griddle over medium heat.
Use a minimum of grease or use cooking spray. Pour 1/4 of the batter onto the griddle and when a few bubbles form, flip the pancake once to finish cooking.

Serving Size: Makes 2 servings of two medium size pancakes each
