Emily's Mediterranean Un-Salad

Ingredients
6 frozen chicken tenderloins, chopped into small bite size pieces.1 can chickpeas1 beefsteak tomato1 roma tomato6 sweet mini peppers, julienned1/2 cup cilantro (raw), chopped1/2 red onion, diced small2 Tbsp. balsamic vinegarsalt and pepper to taste
Directions
Spray cooking oil on pan, put chicken and chickpeas (drained) into pan and gently (low-medium) until chicken is just cooked and chickpeas have softened slightly. Salt and pepper to taste. When cooked, set aside to cool slightly.

Combine red onion, tomatoes, cilantro, and peppers and set aside.

mix together all ingredients (including any juice in the chicken pan) and add balsamic vinegar. Serve. Refrigerate any leftovers.
