Double Chocolate Muffins

Ingredients
1+ 3/4 cups plain flour1 tspn baking soda1 cup castor sugar1/4 cup cocoa100 g butter (or 120 g applesauce)1 cup yogurt (vanilla, strawberry, banana or chocolate)1/2 cup of milk, low fat or skim1 egg (or 2 egg whites)1/2 tsp vanilla essence 1/4 cup chocolate chips
Directions
Sift the first 4 ingredients into a bowl and mix well to combine. Melt the butter in the microwave, add yogurt, milk, egg and essence and whisk well to combine. Pour the wet ingredients into the dry ingredients. Mix with a spatula just until you can't see dry ingredients, DO NOT OVERMIX. Put batter into a 12 whole muffin pan and sprinkle with choco chips. bake at 200C for 10-12 minutes.
