Ingredients
4 potatoes with skin, chopped2 carrots, chopped1 small zucchini, chopped (optional)1 onion,chopped4 tablespoons olive oil1 tablespoon Balsamic vinegar1 teaspoon Italian seasoningsalt, pepper to taste
Directions
Place all ingredients in a bowl, stir to mix. Dive ingredients into 4-5 serving portions and wrap each serving in individual aluminum foil packets, sealed tightly. Place on grill, turn after about 15 min. to cook on both sides. Enjoy your outdoor roasted veggies!
