Paleo Apricot Pesto Stuffed Chicken Breasts

Ingredients
2 oz dried apricots1T garlic1T almond flour1T Olive Oil1c fresh basilsaltpepperBoneless chicken 2T Olive Oil
Directions
Blend first 7 ingredients in food processor until crumbly. Rinse chicken and pat dry. Place between 2 sheets of parchment paper and flatten with a kitchen mallet. Scoop equal 1 - 2 T. of apricot pesto onto center of each chicken breast, roll and secure closed with a small skewer or toothpick. Pour 2T olive oil into the bottom of a baking dish and place chicken inside. Sprinkle remaining apricot mixture over each piece of chicken. Cover and cook at 350 degrees for 40 minutes.
