Carrot Cake Oatmeal from Oh She Glows

Ingredients
2 cups finely grated carrots2 cup almond milk1 tbsp virgin coconut oil2 tsp pumpkin pie spice mixpinch of salt1 cup steel cut oats2 tsp vanilla extract4 tbsp walnuts4 tbsp raisins
Directions
Finely grate carrots, heat almond milk, coconut oil and spices. Stir in grated carrots, oatmeal, bring to a boil. Simmer for 10-15 minutes stirring frequently. Remove from heat and add walnuts, raisins and vanilla.
