1 onion, sliced1 green bell pepper, sliced1 red bell pepper sliced2 cups sliced fresh mushrooms, or 2 4oz cans mushrooms1 yellow squash, diced1 zucchini, diced5 cloves garlic, minced or more4 boneless, skinless chicken breasts, sliced3 tablespoons olive oil3 tablespoons homemade taco seasoning1 lemon, juiced2 tablespoons fresh cilantro, chopped finelyWheat Belly Flax Tortillas and your favorite fajita toppings (not included in the calculator.
Instructions
Preheat oven to 400 degrees.
Place veggies and chicken in 9x13 baking dish.
Drizzle and coat with olive oil. Sprinkle taco seasoning over dish and toss to coat.
Roast in the oven for 45 minutes, stirring once halfway. Add garlic at halfway point
Top with lemon juice and fresh cilantro if desired.
