Apple, Tomato and Tuna Salad

1 Can (6 oz) tuna, water packed, drained1 small onion, diced1 stalk celery, sliced1 tsp. spicy brown mustard2 T fat-free mayonnaise1 Apple, cored and diced4 C fresh romaine lettuce2 Tomatoes, cut in wedges
1. In a medium mixing bowl, coombine tuna, onion, celery, mustard, mayonnaise, and apple. Mix well.
2. Divide lettuce and tomato wedges between two separate plates. Top with a portion of tuna mixture. Serve and enjoy!

BUTTERFLYMING
The name made me want to try it. I never had apple with tuna. Still I was hesitant. I was delicious! I'm going to have it again this week. I put it in my meal planner. It was a wonderful party of flavors in my mouth. Also I never had spicy mustard. I loved it. Felt like I was cheating. Good. - 1/17/11

At first glance tuna and apples doesn't sound appealling but the salt of the tuna really brought out the sweetness of the apple. The apple, mayonnaise, and tomato kept the fish from getting that "dry" and "fishy" taste usually associated with tuna. Tossed on top of lettuce this was good and quick. - 5/31/08
