Ingredients
Assorted tomatoes (blanched, peeled and chopped), bell peppers, zucchini, onion, carrots, mushrooms, garlic, oregano, bail, cavendars, turmeric, cayenne, sea salt, peppercorn medley, extra virgin olive oil, water
Directions
Saute onion, peppers, sliced mushrooms and garlic in 2tbsp of evil until slightly cooked. Add the rest of evoo, 2 cups water, tomatoes, spices, herbs and Parmesan. Heat to a boil. Turn temp down to a low simmer. Cover. Stir once in a while for 4 to 6 hrs. Cool. Put in food processor or blender until desired consistency. Yummy and healthy, enjoy
