Ingredients
2 heads of fresh broccolijuice of 1 lemon2 tbs vinegarsaltpepperclove garlic1/3 cup extra virgin olive oilTBS dijon mustard1 Tsp Shredded parmesean (optional)1TBS Red Pepper flakes (optional)
Directions
wash and trim broccoli into 2" florets
peel stems and trim to 1' chunks
steam, covered, 4-5 minutes. *NO longer, as it will result in mushy broccoli, drain
whisk all other ingredients except cheese
Toss broccoli in vinaigrette, chill
Sprinkle with cheese and red pepper flakes before serving
