Mexican meatloaf

Ingredients
Directions
2 lbs. extra lean ground beef2 lbs. lean ground turkey3 medium tomatoes, chopped1 1/2 cup onion, chopped (2 medium onions)2 1/2 cup bell pepper, chopped (use any color, 2 large peppers)1 cup oats, Quaker original1 can (approx. 8 oz) tomato sauce (I use El Pato tomato sauce, Mexican hot style)3 large eggs, beaten8 tsp minced garlic (more or less to taste)1 1/2 Tbs. black pepper1 Tbs. chili pepper, dried & crushed~~~~TOPPING:4 Tbs. Hot sauce, Sriracha hot chili sauce (optional) (or other topping to taste; barbecue or tomato)
Serving Size: makes 24 slices, 3" by 1" thick slices
Directions:
1. Saute the tomatoes, onions, & bell peppers in a large skillet, until tender, about 15 min. (volume will decrease by about half). Let cool.
2. In large bowl, combine oats, tomato sauce, & beaten eggs. Let sit to soften the oats.
3. Grease a 9 x 13" pan. Preheat your oven to 375 degrees F.
4. Once the sauteed vegetables have cooled, place beef & turkey in the large bowl and add the vegetables, garlic, and spices.
5. Mix thoroughly (I use my hands, well-washed of course.)
6. Shape 1/2 of the meatloaf mixture into a loaf at each end of your greased pan, leaving a gap inbetween.
7. Cover pan with foil. Bake for 30 min.
8. Remove foil.
9. Spread a coating of topping on loaves (optional). Continue baking 25- 30 min, until browned. Cut loaf to check for doneness.
10. Cool before slicing.
