Jane's veggie breakfast omelet

Ingredients
1 egg1 egg white1/4 C. mushrooms, sliced1/4 C. chopped fresh spinach1/2 chopped scallion, or to taste2 tbsp. parmesan cheese
Directions
Take out a small skillet. Coat it with Pam butter spray, or I can't believe it's not Butter spray. Add scallion and spinich. Cook until onion is somewhat clear. (About 5 minutes.) Add mushrooms, and cook until they are reduced in size, maybe two or three minutes. Pour beaten eggs over ingredients, sprinkle cheese over the eggs. Put a cover on the pan, have the heat on the stove at low, and let the eggs cook. Probably less than five minutes. Take the omelet out of the pan and fold over, for a beautiful breakfast.
