Egg Muffins

Ingredients
1T chopped onion2 T chopped sweet peppers1/4 c chopped mushrooms1T Hormel real bacon bits (can be omitted for vegetarians)1/2 c liquid egg whitesYou can sub your favorite veggies though, have fun with the mix.
Directions
Either buy your veggies pre-chopped or chop them yourself. I use pre chopped onion and bottled bacon bits (which can be omitted for vegetarians.) I usually multiply by 6 and use a large 6 cup muffin tin. Add ingredients to each cup, this should completely fill the cup. Pre-heat oven at 350 degrees. Bake for 25-30 minutes. These are good to make ahead and freeze or just for the week to warm up. Just need microwaved for about 60-90 seconds.

Serving Size: recipe makes 1 muffin but can be multiplied
