chicken chili

Ingredients
1 tbsp olive oil1 tspn chili powder1 tspn cumin powder2 lbs chicken thighs or breasts cut into bite size pieces2 cans black beans1 can diced tomatos with green chilis3 cups tomato sauce1 onion chopped2 zucchini chopped1 tspn chopped garlicsalt to taste (about 1 tsp)
Directions
saute the chicken pieces in olive oil and salt. Remove from pan and reserve some of the oil and chicken drippings to saute the onions, garlic, cumin, chili powder and garlic. Add the zucchini when the onions are halfway cooked and stir. Return chicken to pot, add beans and about 1/2 to 3/4 cup of the bean juice. Add tomatos and tomato sauce. Let it all simmer for 20 minutes to 1/2 hour.
