Pork & Cashew Teriyaki Stir Fry

Ingredients
6 Oz. Pork Chops, cooked & cut into cubes1 Cup Carrots, chopped1-1/2 Cups Mushrooms, chopped1 Cup Bell Pepper (any color), chopped1/2 Cup Onion, chopped3/4 Cup Cashew Pieces1/2 Cup Light Teriyaki Sauce
Directions
Heat a large frying pan or Wok on high. Add carrots (no oil required) and cook for about 4 minutes. Add the bell pepper and cook for another 3 minutes. Add the mushrooms and onions and cook for 4 minutes. Add the pork cubes and teriyaki sauce. Lower heat to medium and cover. Let simmer for about 5 minutes. Serve immediately as is or over wild rice.

    This was delicious! I forgot to add the onion, so i bet it will be even better next time! I also substituted the teriyaki sauce with a store brand that had pineapple juice in it, and the sweetness of the sauce and peppers combined with the saltiness of the cashews was perfect together! - 3/30/11
