1 cup Breakstone's Fat Free Cottage Cheese 0.25 cup Cheese, Kraft 2% Milk Reduced Fat Shredded Cheddar 0.5 cup Egg substitute, liquid (Egg Beaters) 0.25 tsp Garlic, Granulated (Dry) (by PATFERGY) 0.15 tsp Dry Mustard (by POPEYETHETURTLE) 1 dash Salt 1 tbsp Extra Light Olive Oil 0.15 cup Flour - Gold medal all purpose flour
In a small bowl, whisk together eggs, seasonings and flour. Add cottage and cheddar cheeses. Using a rubber spatula, mix thoroughly. In a nonstick frying pan, add olive oil and heat before adding 1/4 cup portions of egg/cheese mixture. Cook for approximately 2 minutes per side (or until slightly browned).
