Chicken, Black Beans and Rice with Cilantro and Lime

6 oz Tyson boneless, skinless chicken breast 1.5 cup Black Beans, 15 oz can, Reduced Sodium - rinsed & drained 2 cup White Rice, medium grain - cooked4 tbsp Cilantro, raw .50 cup, chopped Onions, raw 1 oz Jalapeno - Ortega, pickled, chopped (optional)3 tbsp Real Lime Juice (by MARICHINO) 1 tsp Kirkland California Granulated Garlic (by TEXASWILLIE) 1 tsp Cumin (ground) (by IVORYGRL1)
Cut chicken breast into small chunks - cook in large skillet with chopped onions until chicken is opaque and onions tender.
Add the black beans, cumin, granulated garlic (can also use fresh garlic if you have it on hand), about 1/2 tsp sea salt and about 1/2 of the lime juice. Stir to combine. Add 1/2 of the chopped cilantro and jalapeno peppers (if desired) - stir to mix. Add approx 2 cups of cooked white rice and the remainder of the lime juice & chopped cilantro. Stir to combine. Let set for a couple of minutes, and then serve. YUM!!
Serving Size: Makes approximately (3) large servings, (4) smaller
