Spinach Mushroom Saute

Ingredients
1 1/2 cups baby spinach, cleaned1/2 cup mushrooms- any type but portobello or cremini are my favourites1 tsp of reduced sodium soy sauce2 tbsp of Light Italian Salad Dressing
Directions
Put salad dressing and soy sauce in 8 inch skillet, add sliced mushrooms. Cook over medium heat for 8-10 minutes, until mushrooms are almost cooked. Add spinach. Continue cooking until spinach leaves have just wilted. Be sure to stir while cooking.

Enjoy! Serves 1 person- Counts as 2 vegetable servings
